Cricket St Thomas from Somerset provide us with Capricorn goats cheese. The company pioneered the craft of making soft-mould cheese in the UK over 30 years ago and over the years have used their collective experience to produce excellent traditional soft ripening cheeses. Capricorn has a creamy, soft texture as it ripens with a clean nutty flavour.
