Taking over 24 hours to make, and 20 weeks to mature, the Dorset Blue Vinny is made using an adapted 300 year old recipe. Throughout the years this cheese has had many local legends attached to it such as they used to leave it next to the famers boots to encourage the mould to grow. Things have thankfully changed a lot since then! Even though the cheese is very blue and veiny, it isn’t overwhelming strong, and has a slight herbal taste due to the mould.
