today we’re turning the spotlight on barber’s farmhouse cheesemakers.
Barber’s Farmhouse Cheesemakers have been producing cheese on their Somerset farm since 1833. Their range of cheddars are made using milk from the farms own herd as well as from neighbouring cattle, combining innovative techniques with age old recipes to create their award-winning cheeses.
Barber’s are the only cheesemakers to use traditional starter cultures in their rindless cheddar. This collection of friendly bacteria gives the cheeses their characteristic complexity and depth of flavour. They are also one of just six dairies in the world producing Protected Designation of Origin cheddar, a status awarded to food produced in a certain way using locally sourced ingredients.
