My love affair with chorizo began a few years ago when I discovered it in a recipe for chicken traybake. It is wonderfully smoky, spicy and meaty and can enhance most dishes from delicate fish to bog standard beans. Discover a rich risotto, a comforting stew and a breakfast showstopper.
CHORIZO & RED WINE RISOTTO
This risotto recipe from Jamie Oliver is a classic midweek meal, quick and easy to make but packed full of flavour. We like varying the size of the chorizo when chopping resulting in smaller diced pieces just for flavour and larger chunks for extra texture and bite. Frying these larger chunks for a little longer before adding the garlic gives them a lovely crunch without burning the garlic. We are also big chilli lovers so recommend finishing off the risotto with a drizzle of chilli oil – perfection in a bowl!
CHORIZO & BUTTER BEAN STEW
This is ultimate comfort for the colder months. It is also a family favourite in our household – one pan so less washing up and only four main ingredients! We like adding in some spices for extra flavour, add a teaspoon of smoked paprika, cayenne pepper and sweet paprika while you’re frying the chorizo for a wonderfully warming stew. The chorizo is best cut into thick slices so they don’t get lost among the beans and we find the chunky texture also lends itself well to being scooped up onto crusty bread – delicious.
CHORIZO & TOMATO SHAKSHUKA
A perfect weekend breakfast to enjoy with friends, shakshuka is a classic North African and Middle Eastern dish not traditionally made with chorizo. Try this recipe though and we’re sure you’ll agree with its inclusion here. Full of flavour and perfectly balanced we’d recommend using the finest quality eggs for the best result. Serve with some fresh crusty bread.
