Description
Barber have been in the cheese making game since 1833, from this they have a wealth of experience when it comes to cheddars. Using milk from cows that have grazed on the lush pastures of Somerset and Dorset, the West Country pumps proudly through their veins. The mature is usually matured up to 12 months and is full of flavour and character, just as any good farmhouse mature is. It has a rounded balance and rich flavour with a firm yet creamy texture.
