Easy Halloumi Recipes
I love Halloumi because it’s such a versatile ingredient with a great flavour. This month we’ve been running a promotion of our authentic Greek Halloumi so what better time to focus on some quick and easy halloumi recipes – read on to discover more!
Pesto & Roasted Red Pepper Halloumi Burger – Serves 2
Vibrant and colourful this one screams summer BBQ vibes even if the weather isn’t playing ball! You can make your own pesto but equally store bought is fine. You can use it to marinate the halloumi before baking but also mix it with mayonnaise to really optimise the flavour. Similarly the roasted red pepper is a really great addition and adds a sweet and smoky flavour which I love!
This is a wonderfully quick and easy Halloumi recipe and for that reason is perfect for midweek!
Ingredients:
2 x 250g blocks of Halloumi
2 x tablespoons fresh or jarred pesto, plus extra for the mayonnaise
1 x tablespoon mayonnaise
1 x red pepper, roasted
1 x tomato, sliced
1 x little gem lettuce, divided into slices
2 x brioche buns, toasted
Method:
1: Pre-heat the oven to 220 C, Gas Mark 7
2: Cut a square of tin foil and a square of baking parchment. Line the foil with the baking parchment and place the cheese in the centre
3: Add the pesto to the cheese making sure it is evenly covered
4: Wrap the baking parchment around the cheese and repeat with the foil and seal. Place on a baking tray and bake for 30 minutes.
5: Mix the mayonnaise and pesto together, add salt and pepper to taste.
6: Assemble the burger with the lettuce, pesto mayonnaise, tomato and roasted red pepper, serve immediately. Chips optional.
Halloumi and Avocado Tacos with pickled onions – serves 2
Who doesn’t love a taco!? These are bursting with flavour and are incredibly more-ish. Whilst a lot of people are put off with making their own pickled onions trust me these take just a few minutes to prepare and are definitely worth it!
Another quick and easy Halloumi recipe but with so much flavour! If you’re like us you’ll come back to this one again and again!
Ingredients:
2 x blocks 250g Halloumi
1 x pack Greek style Flatbreads
1 x red onion, thinly sliced
1 x tablespoon sugar
1 x tablespoon white wine vinegar
1 x teaspoon chilli flakes
1 x avocado, de-stoned and cut into chunks
1 x 30g pack dill, roughly chopped
1 x teaspoon nigella seeds
Juice of half a lime
1 x tablespoon Greek yogurt
Method:
1: Cut the halloumi into equal sized chunks, each block should result in around 4 chunks.
2: Make the avocado salsa. Mix the dill, avocado, lime juice and nigella seeds in a bowl and set aside.
3: Make the pickled onions. Mix the red onion, sugar, white wine vinegar and chilli flakes plus a generous pinch of salt in a lidded container or jar. Close tightly and shake vigorously until combined. Set aside.
4: Heat a drizzle of oil in a frying pan over a high heat. Add the halloumi and fry for 1 minute on each side or until browned.
5: Heat the flatbreads in a frying pan or grill over a high heat.
6: To serve spread the yogurt over the flatbread then divide the halloumi between them. Add the salsa and pickled onions plus extra chilli flakes to taste. Serve immediately.
