4 of the best recipes with… Smoked mackerel

January is normally a time of restriction and calorie counting but in our experience these tough limits on our diets last all of a few weeks before being ditched and ‘normal’ eating habits resumed. We are far more interested in inclusive food choices and exciting, vibrant recipes which replenish some of those, lets face it, lost vitamins over the festive period.

For our first recipe blog of 2022 we’ve picked smoked mackerel. Mackerel is packed full of minerals and vitamins as well as containing heart-healthy and brain boosting Omega 3 plus it tastes pretty good. These recipes are guaranteed to pick you up this January!

Japenese-style Mackerel Rice Bowl

This vibrant bowl is packed full of Asian flavours with a sweet and salty teriyaki sauce and fresh garlic and lemon which perfectly compliments the strong mackerel flavour.

Smoked Mackerel & Lemon Risotto

Risotto is always a winner in our house and this creamy mackerel version doesn’t disappoint. It can be a laborious task continually stirring but trust us this is worth it. Top with some fresh greens and feel free to feel virtuous all evening.

Smoked Mackerel Kedgeree

Kedgeree is thought to have originated in India and is traditionally made with smoked haddock but we think this smoked mackerel version works really well. The combination of curried spices really jazzes up your breakfast.

Scandi-style Smoked Mackerel Sandwich

Open sandwiches are not only visually appealing but also make a delicious light lunch or snack. Smoked mackerel, creme fraiche and dill is a classic combo and the dark rye bread also happens to be good for you but we’ll gloss over that.
